    We are one of the newest caterers to the Omaha metro area. I am Paul the Executive Chef. I am a New York City trained chef and I train my staff to meet these standards. Ever since my childhood I have had this love for cooking. In my early 20's I listened to this love and moved to New York City. There my passion for food continued to grow. I soon decided to attend "New England Culinary Institute" in Vermont. Here is where you learn many of the basics of becoming a chef. It is not your typical school; classes are in actual running establishments from day one, and you do everything from scrubbing floors to ordering from distributors. The school is very demanding and intense. It requires great stamina and dedication to benefit from this type of education.

    For my first Internship I took a position in the very prestigious Mark Hotel under David Paulstich. There I really learned what it was about to work in NYC. In NYC the upper echelon of restaurants and hotels requires inner strength and to think on your feet. You're working with people that have worked for some of the best chefs of the world. There is awesome talent every where and you want to perform well. My next position was at Judson Grill under the tutelage of 3-star chef Bill Telepan. Bill was my biggest mentor. He taught me how to respect ingredients and try to get the best of them for the highest standard of end product. I later worked at Seven Bistro under Vincent Barcelona.; he taught me organization and technique. My final and last position in NYC was at the 5-star, 5-diamond Four Seasons Hotel. Additional to the latter I did stints at the River Cafe (Rick Laakkonen), Tocqueville (Marco Moriera), Cafe de Artiste. Special events with such renowned chefs as Daniel Boulud, Alfred Portale, Tom Collichio, Christian Doulivier and Jean-Louis Palladin.

    At Your Service takes my experiences to every venue we do. We have a passion for great food and we want to present you with the best in food and service. Parties can be small or large, gourmet or casual we are here to give you what you want. Why go out when we can bring the restaurant to you? We will look forward to preparing your next event.
